Tonight I cooked!

I don;t love to cook, and tonight lance was gone working late for his brothers AC company, we are still waiting for the contract at Freescale, so next week, he'll be starting there, hopefully! but in the meantime, he's helping his brother out. and had a service call in Casa Grande. he got home at 10:30. SO i was on my own for dinner with kids, and few groceries in the fridge, and the main thing we were lacking was salsa, we ran out a couple days ago, and i haven't been to the store, so anything easy was out. I thought. BUT I looked in the fridge.....and found tomatoes, onions, limes, garlic and avacados! so I made my salsa from scratch, made some awesome homemade guacamole, and cooked up some refried beans, fried my own tostada shells, and made tostadas, with home made salsa and guac! SO YUMMY! the kids actually had super nachos with melted cheese, beans, salsa, guac, and sour cream! they thought it was the best dinner ever. and while I was making a burrito for the baby, I had the great idea of frying the burrito, and MMMMGOOOOD! i kept the burrito for me, and gave the baby a cheese crisp! delightful! I never cook but when i do it is fantastic and delicious! Lance was bummed as I told him about it over the phone. HE always misses out on the good dinners! and I am feeling pretty fabulous about being domestic tonight! and i am full! the only thing about when I cook is, it is always later in the evening, when i finally get desperate to do it. but the kids were thrilled. and fed something better than cereal or my normal standby spaghetti!
